Irish Wheaten Bread (Sigi)

1. Ingredients: 500 grams wholemeal flower (ideally spelt, which is called ”Dinkel” in German, but wheat flower is OK too), 1/2 litre buttermilk, 1 teaspoon salt, 1 teaspoon baking soda (German: Natron).
2. Mix flower with salt and soda, make sure the soda and salt are distributed well. Stir in the buttermilk and mix well with a spoon. You may want to knead the dough by hand for a little while, but it is not necessary.
3. Shape a loaf and place it on a baking sheet (baking paper helps to keep the bread from sticking to it). Cut a cross into the surface and dust it with some flower. Bake it in the oven at 190 degrees for about 50 minutes. After you take the bread out leave it to cool down on a griddle and cover it with a dry tea towel. Enjoy!
